Spam Scrambler (don't mock it 'till you try it!)

Good morning darlings!

As you know, I'm training for a half marathon. Which means not only am I working out and running constantly, I'm also cooking up a storm (which my bank account has loved). Today I'm bringing you a semi-healthy recipe (you can substitute items to make it extra healthy) for breakfast. Now, I know what you're thinking already.. Spam. But it is a staple here on the islands so I decided to show you what I do with this item.

This recipe is super simple. I basically just threw a bunch of ingredients I had laying around together.

6 Eggs
2 Small Potatoes
1/2 Red Bell Pepper
1/2 Green Bell Pepper
3 Slices of SPAM, 1 cm thick
1 Handful Baby Spinach
1/4 c Onion, chopped
1 Small Handful Feta Cheese
Olive Oil

I know this picture has butter in it, I couldn't find the olive oil at the time. Butter was not used.

First things first, rinse all of your veggies. Even if they come from an organic store like mine did, you never know.

Chop potatoes, onion, and bell peppers, put to the side.

Next, I used olive oil to get the pan ready for the potatoes. You can use butter, vegetable oil, coconut oil, what have you.

Put potatoes in small skillet to start cooking (since they take the longest).

With SPAM, I like to make it super crispy (kind of like a substitute for bacon). It is naturally pretty salty to the taste. Cut up 3 slices about 1 cm thick and then chop like you did the veggies. Since it takes a while for the spam to cook (I cook it on low heat) I add them to the potatoes. It jump starts the cooking process while giving the potatoes some flavor as well.

Cover the SPAM and potatoes and cook on low to medium heat.

Meanwhile, start to get your eggs ready.

Just kidding.. :)

Crack your eggs into a bowl and beat them. I used a whisk, but you can use a beater, fork, or what have you.

Put the eggs aside and get a second skillet ready for your veggies. Once again, I used olive oil.

Add the peppers and onions to start cooking. I use medium-ish heat so they still have a little crunch to them.

After sauteing the veggies for a little while, add in the cooked SPAM and spinach. Keep the heat at medium.

After the spinach has been cooked a little, it's time to add in the eggs. Pour them over the veggies to start scrambling.

Mix the veggies, SPAM, and eggs together like you do when you scramble eggs. Uncover the potatoes and turn up the heat a couple notches to crisp the outsides. Next, cut the feta cheese (however much you want, I used a teeny tiny handful) and crumble over the top of the scramble.

Voila! You now have a SPAM Scrambler with fried potatoes.

Like I said, semi-healthy. You can substitute egg whites for the eggs, take out the SPAM, and pair it with something else to make it more healthy. This is a simple breakfast dish you can throw together in no time. It definitely helps to kick start your day!
