Today I'm here to share with you a gluten free recipe for Pumpkin Whoopie pies. These are very, VERY tasty and while you eat them, there is no way you miss the processed sugar. I call it Paleoish because it does have dairy for the filling. If you have any questions about the cookies, feel free to drop me an line. Without further ado, the recipe.

*1/2 teaspoon of vanilla extract


Seriously everyone reading this, really freakin' good.

A quick note: I've made these quite a few times both with butter and with coconut oil. They always turn out better when I use coconut oil BUT if that isn't something you have lying around, butter is very delicious too. (recipe adapted from deliciously organic.)

I have never made whoopie pies, but I have a pan specifically designed for pumpkin shaped whoopie pies, so I am def trying this! :)
